The Grand Arôme denomination is reserved for rums which have undergone a slower fermentation of the molasses, which results in the maximum concentration of fruity and spicy flavours. Aged for 10 years on the Island of Réunion, where the tropical climate drew oaky and tannic notes from the cask, and then brought back to Europe for a final period of rest, it has a marked “funky” character of overripe fruits (apples, pineapples, dates…) while remaining dry and distinctly peppery, with a touch of cinnamon too.
A release of Diamond with less oak influence and with a very aromatic character. The typically spicy and balsamic notes of mint and camphor at the nose are backed by a robust level of esters and a farmy touch. At the palate,it starts moderately sweet, but it immediately turns to the dry side with a very spicy blast of white pepper. PThe pungency is intense but held together by the creamy waxiness, and by aromatic notes of anise and chamomile, with a twist of lemon rind.
Distilled in a legendary 250-years-old double wooden pot still, renowned for its muscular style, this very limited release showcases the most intense and rich style of all Demerara rums. Very austere, with its tannic and dry intensity, it has a markedly aromatic palette rich of esters, black coffee, liquorice, gentian root and medicinal herbs. Underneath the dark and musty leathery character, though, flowery notes of lavender and fruity echoes of red cherries still shine, amplified by the final 5 years of maturation in a sherry cask.
